What are cacao nibs?

The cacao (pronounced KAH-kow) tree is a broad-leaved evergreen that grows near the equator. It produces fruits in the form of pods, which contain seeds. Nibs are the seeds or meat of the roasted cacao bean with the shell removed. Cacao nibs are the rawest, purest type of chocolate and consist of crunchy particles of intense flavor. They have not yet been ground or transformed into the smoother and more refined forms of sweetened chocolate. The word cocoa comes from the Spanish word cacao.

What is quinoa?

Called the "mother grain" by the Inca, quinoa (pronounced KEEN-whah) is a high-energy grain native to the high valleys of the Andes. Quinoa is rich in nutrients, containing up to 50 percent more protein than most other grains. It is a source of calcium, iron and vitamin B. Quinoa also contains high levels of lysine, an amino acid the body needs to make protein. In Bolivia and Peru, chocolate and quinoa are frequently paired together.

What is the shelf life of Cacao Nibbles & how should I store the product?

Cacao Nibbles have a shelf life of nine months, if stored in a cool, dry environment (60-70 degrees) with a humidity no higher than 50 percent. Keep Cacao Nibbles away from heat and direct sunlight to avoid softening. If the temperature fluctuates too much, the cocoa butter may soften and rise, causing gray discoloration (bloom) to appear on the chocolate. The melting point of chocolate is between 85-95 degrees F.

What is the percentage of cacao solids in the dark chocolate used in Cacao Nibbles?

The chocolate used in Cacao Nibbles is considered bittersweet and contains 63 percent cocoa solids. This high percentage of cacao solids creates a strong, intense chocolate flavor. Also, the higher the cacao solids content of chocolate, the higher its antioxidant content.

Who can eat Cacao Nibbles?

Cacao Nibbles are all-natural and wheat and gluten-free. They're especially good for celiacs and people with food allergies.
